What is UPH?

UPH (units per hour) shows how many items you produce or sell per working hour in the selected date-time range. Knowing how many units leave the kitchen each hour lets you plan capacity, shift intensity and staffing based on data, not guesswork.

In Ritapos, UPH calculations respect your store schedule and open/closed days. Instead of only watching revenue, you can compare branches and shifts by how many units they move per hour.

What is UPT?

UPT (units per transaction) shows the average number of items per check in the selected date-time range. It is the simplest way to measure basket size and upsell or cross-sell performance.

When you track UPT regularly you clearly see how waiter suggestions, menu design and campaigns change the average basket size.

What is UPT?

Measuring success with UPH and UPT together

UPH or UPT alone only tell part of the story; together they show how strong a branch really is. The UPH/UPT analysis report in Ritapos plots the last three complete months with UPT on the X axis and UPH on the Y axis, using median UPH and median UPT as success thresholds.

Each month appears as a point in this quadrant. Months above both medians are your "star" periods; high UPH with low UPT highlights a basket-size problem, while high UPT with low UPH points to traffic or trading-hours issues. This gives you a clear improvement target for every month.
